Freezer Meals

Well, I'm over a week into my bed rest restrictions, and as I mentioned before, my mom is here taking care of the kids and the house while I have to watch from the couch.  She is seriously the best!  I don't know what we would do without her here with us at this time!  Thank you, Mom!  We love and appreciate you more than we can express!

I, of course, have a few things (not many, though, since I got a lot of it done early on as I somehow knew that it would need to be done) left on the to-do list before the baby comes, and my mom is graciously helping me with those things.  Last week, the agenda was to get some meals put into the freezer for after the baby arrives.  So after some serious internet searching for dishes that freeze well, I decided on about 12 different things to make.  I started on some of them the Friday morning before I went to the hospital (Enchilada Soup and Blueberry Muffins not pictured.  Recipes available upon request):
Pumpkin Chocolate Chip Muffins
BBQ Chicken for Sandwiches

    








Chipotle Macaroni Casserole

and my mom finished up the rest of them last week (Chicken Spaghetti, Pasta Fajioli, and Turkey and Gravy for sandwiches not pictured):

Chicken Noodle Soup
(will add noodles after thawing)
Zesty Pineapple Chicken



Baked Ziti

Ham and Cheese Stuffed Manicotti
Breakfast Muffins

I haven't done this with either of my other pregnancies, but I know that it's going to make my life with three kiddos much easier!  In fact, I have decided that I'm going to start cooking like this more often- doubling the recipe when I make dinner and freezing half.  I can't wait to try out more of the recipes that I found and I have even checked out a few books on freezer cooking from the library.  I'll keep you posted of any fabulous dishes we find:)
